“I first tasted Assyrtiko in August 2006, while on holiday with my wife Sue on the Greek island of Santorini, the birthplace of the Assyrtiko variety. Its crisp, acidic qualities reminded me of the Riesling in the Clare Valley and yet it was a taste I had never experienced before.
Very interested in this new variety, I began the process of importing grafts to Australia.
Our journey to Assyrtiko was exciting and allowed us to produce a wine that, I believe, is a true expression of the variety!”

Organoleptic Characteristics:
A soft and bright straw yellow colour. On the nose, we have herbal aromas with notes of pear and lime. On the palate, it is intense with a high concentration of Assyrtiko characteristics. Minerality, refreshing and balanced acidity. Long-lasting aftertaste.
Pairings:
Enjoy with seafood and shellfish. Serve at 10-12°C.
